This recipe is extremely easy. I found this online and as usual I had to try it. A big plus is that it is a crock pot version. I always make a large pot to add to the freezer in small containers. I start by washing and sorting through the red beans. I found a different type of bean in the bag. Discard any broken pieces and place the beans in the crock pot. Next, add the chicken broth and water.
Cut the sausage in small pieces add to a pot of water. Boil the sausage for about 5 minutes. This will get rid of the extra grease from the sausage.
Add the vegetables (onions, celery, bell pepper and garlic) that has been cut up in small pieces.
Add the meat after it has cooked for a few minutes. Finally, Add creole seasoning. I did not have any. I used season salt and cayenne pepper. I used only half dose since I cannot use lots of spice.
I really love my crock pot. I can change attachments. I added an attachment for stirring with meat. The electric handle has a pulse that will slowly stir when pushed for 3o seconds. It will automatically stir ever hour once the crock pot has been on for a couple of hours.
It has a plain handle attachment to use the crock pot without stirring. It also included a paddle attachment that can be used with soups.
Cook for 7-8 hours on high setting. Serve over rice.
- 1 pound red beans
- 7 cups water
- 2 cans chicken broth
- 1 green bell pepper, chopped
- 1 medium onion, chopped
- 3 celery stalks, chopped
- 3 garlic cloves, chopped
- 2 pounds sausage – I used 2 1/2 pounds (boil 5 minutes in water)
- 2 tablespoon creole seasoning
- cooked rice
Add everything to the crock pot and cook for 7-8 hours on high. Serve over rice.
